*7  A container of raw chicken was stored alongside raw seafood and raw beef patties in the cooler located along the main prep-line in the kitchen. DUE TO THE DIFFERENT PATHOGENS AND COOKING TEMPERATURES ASSOCIATED WITH DIFFERENT SPECIES OF MEAT, SEPARATE RAW MEATS PRODUCTS. SO, TO PROTECT FOOD FROM POSSIBLE CROSS CONTAMINATION, STORE FOOD PRODUCTS IN THE FOLLOWING ORDER:(FROM THE BOTTOM TO TOP): (1) RAW POULTRY--CHICKEN AND TURKEY, (2) GROUND MEATS--BEEF AND PORK, (3) WHOLE MEATS--BEEF AND PORK, (4) RAW SEAFOOD, (5) FRUITS AND VEGGIES, AND (6) READY-TO-EAT FOODS AT THE VERY TOP [750.130]. A stack of hamburger patties were found to be stored in the true freezer without any sort of protection--it was not stored in a protective container but instead, they were left on the bare storage racks within the freezer. Provide for all food products in storage to have proper covers or overhead protection [750.130] Immediate/Onsite
22  The blade installed on the table-top can opener blade located at the side kitchen was unclean. Keep all food-contact surfaces clean at all times [750.800] Immediate/Onsite
23  The following non-food contact surfaces are unclean: (1) the tables under the grills located along the main prep line and the (2) exterior surfaces of the cooking equipment in the kitchen--along the main prep line. Clean all surfaces [750.800]. Next Inspection

36  The floor under the cooking equipment located along the main prep line in the kitchen is unclean. Provide for all floor areas to be kept clean, and the facility shall maintain a regular cleaning schedule [750.1220]. Next Inspection
37  There is a small gap on the lower wall located in the side-kitchen--behind the storage rack. Seal the hole and maintain all walls within the facility in good repair [750.1210/1220]. In addition, the inside of the ventilation hood located at the side-kitchen is unclean. Provide for all attached equipment to be kept clean [750.1220]. Next Inspection
